Weekly 11/19/09 - Table Notes


SECTION ONE:  TABLE NOTES

Advanced Clinical Nutrition... endocrine imbalances, liver disease, etc.  We seek to balance the body so that it can heal itself.  

Advocate a whole food diet:  go back to the earth.  Not a vegan, not a vegetarian.  Meat should not be the center of the diet, but is an important part .  
e.g. grass fed butter.
If we eat meat, it should be organic, grass fed.  
I've been in Cinti five years, and the local food movement has grown phenomenally.

FabFerments, available at Northside Farmers Market (Wed afternoons), and College Hill Farmers Market (thursdays, inside at College Hill Coffee Co.).
Fermented foods and sprouted foods are terrific to eat. Kombucha, sauerkraut (naturally fermented, not vinegar process, see in the refrigerator section).  Hi concentrations of pro-biotics.  It magnifies the nutrients in the food.

Same thing with sprouted foods.  e.g. vit A increases 300% when you sprout the seed.
Also, phytic acid occurs in all grains; acts as an anti-nutrient; blocks absorptions of iron, calcium, zinc, copper and other nutrients.  65% of Americans are zinc deficient -- relates to prostate cancer.  
BCDS (B complex deficiency syndrome).  
Calcium and vit D are not absorbed from artificially introduced CAL and D.  

Blood tests are designed to detect pathology, but not pre-pathology.  
Cincinnati is an epicenter of Rickets (vit D deficiency)

MDR (minimum daily requirements) of vitamins and other nutrients are just to maintain health, not to correct deficient states.  

When foods are milled and refined we deplete it of everything.  then if we "enrich" that depleted food, we are highly selective, adding isolated forms, not the whole complex that occurs naturally.  

Supplements: why take supplements (vitamins).  To get out of a state of illness.  Once out of the illness, you can stay healthy if you just eat good whole foods.  

Organic food is best.  Locally raised, grass fed animal food is best.  

Allan  you can get organic beef that is not grass fed.  
Mike:  "organic" does not mean a lot any more.  But for this conversation, let's say "organic" means what we hope it means.  No chemicals.  

Whole food.  + supplements which should be also whole food nutrients.  Most supplements you buy at stores are isolates or synthetic combinations.  
Ezekiel and Genesis bread by Food for Life, is whole grain sprouted bread.  Is great.  So much better than Wonder Bread.  

Vit C "as ascorbic acid" is not real vit C.  Ascorbic acid is only a part of Vitamin C.  That's an isolate.  It won't work right without its complements like bio-flavinoids from, for instance, rose hips.  Rutins.  

Mr. G: what is synergistic and what is interfering.  
Mike  we know that if you eat healthy foods you get xyz benefit.  Whole food nutrients vs isolated nutrients consumption has been studied.  Recently, studies show that isolated nutrients enriching our foods do nothing.
Don't help.
We should eat foods in the natural state rather than refined and then enriched.
Today we have more heart disease, more arthritis, ...  than ever.  More cancer.  
We may live longer, but we are pumped full of drugs and on machines.  
Soda pop is the worst thing ever made; zero nutritional benefit.  Especially bad is the diet pop.

Controversy over mercury amalgam fillings.  No question; better if we remove the toxin.  
Arthritis:  2 concepts.  1- CRONI means calorie restriction with optimal nutritional intake; the idea is to eat fewer calories to live longer; nature provides nutritionally dense foods that are loaded with nutrients, e.g. broccoli.  
2- eat an anti inflammatory diet... inflammation is the root of most disease.  heart disease, cancers, etc.  Certainly arthritis.  Sugars cause inflammation.  
People who eat tons of fruit and sugar and starches are mistaken.  
No, I am not for the Atkins approach.  
Arachidonic acid present in conventional red meat; it is an inflammatory agent.  Omega 3 is helpful in reducing inflammatory agents.  
We tend to have low Omega 3 fats in our diet.  The perfect ratio is 1:1 (omega 3 - omega 6) or a 1:2 (3's to 6's) ratio.  Increase Omega 3 (e.g. from fish oil) (or from krill) to reduce inflammatory.
Other sources of Omega 3;  flax seed oil.  
Our diets tend to be 1:44 !

Fish used to be one of the best foods.  Now there might be mercury,...
Unless fish is caught from Arctic waters...probably not so good.

Carolyn:  is zinc oratate better than chelate?  
Mike  I have no opinion.  At the office we have zinc live chelate.  We use Standard Process.  (a wonderful vitamin company).  Adrenal fatigue is a big problem.  Silent epidemic.  Another one is leaky gut.  
Saliva testing shows cortisol levels.  Indicates adrenal fatigue.  
Test costs $99.
